Chicken Jambalaya
Double the recipe to make 4 servings
1 1/2 tbsp vegetable oil or butter
1lb chicken breast meat, cubed into 1 inch squares
1 red pepper, seeded and cored, diced ( I also use yellow or orange
peppers)
1/4 cup diced celery
1/2 cup brown rice
1/4 tsp red pepper flakes (also known as crushed red pepper)
1 1/2 cups boiling water
1/8 tsp dried thyme
1 tbsp dried parsley
1 bay leaf
1/2 cup slivered ham (I usually get 1/4 lb sliced deli ham and slice it into
thin strips)
Heat oil or butter in a skillet over medium heat, add chicken and cook,
turning frequently for 10 minutes, until browned. Remove to a plate and
season with salt and pepper if desired.
Add to the skillet drippings the pepper, celery, rice and red pepper flakes.
Stir over medium low heat until coated with the pan drippings.
Add boiling water, parsley, thyme and bay leaf. Return chicken to skillet,
cover and cook over medium-low heat for 35-40 minutes, until rice is done.
Remove cover and cook about 3 more minutes, until most of the moisture is
gone. Makes 2 generous servings. Enjoy!
