Hey.
Is anyone else DOG TIRED of cooking all the damn time!?!?! I even enjoy cooking, but I'm so sick of cooking and preparing food. I even cook big stuff so I have lots of leftovers, and I have quick snacks all over the place. How did my mom do it?

Yeah, the cooking only gets to me when I also have to do the dishes. I've started eating lots of tacos, because it only takes a few minuts, and it has a low dish couunt.

Hi Debbie,
YES! I am sick of cooking too. When I am feeling tired or not that well, it seems like such a huge chore... but you gotta eat! Like you, I love making big meals and then eating the leftovers for a couple days, but sometimes even that is more work than I want to do. My favorite meals are 'one pot' meals, everything goes into one pot, so there isn't as much cleanup. Hey, anyone have any favorite recipes they would like to share?

I'm always looking for new recipes. Here are some NON gourmet foods that have flavor and are easy to clean up after.

Colorful Kielbasa

1 can condensed cream of celery soup
3/4 cup of water
1 T butter
1lb smoked kielbasa, cut into 1/2 in pieces
3/4 cup uncooked instant rice
1 pkg frozen peas
1 jar sliced mushrooms
1 cup shredded cheddar cheese

In skillet, combine soup, water and butter, bring to boil. Add kielbasa and rice. Reduce heat; cover and simmer for 8-12 minutes until rice is tender. Stir in peas and mushrooms. Cover and simmer until heated through. Sprinkle with cheese and let stand until melted. 4-6 servings.



Burrito Casserole

1 tube cresecent rolls
1 lb ground beef
1 pkg taco seasoning, prepare according to package
1 16 oz can refried beans
1 pkg shredded cheddar cheese

Brown meant, add taco seasoning and mix in beans. Spread crescent rolls on bottom of greased 9x13 inch casserole dish. Spread meat mixture over rolls and top with cheese. Bake uncovered at 350 degrees for 25-30 minutes. Serve with sour cream, black olives, salsa, tomatoes and additional cheese.



Rattlesnake Beans

1 1/2 lb smoked sausage
1 lb bacon, cooked and crumbled
2 med chopped onions 1/2 c brown sugar
1/2 cup molasses
1/2 cup crushed pineapple
4 cup pork and beans

Saute onions. Slice sausage into bite size pieces. Stir everything together, cover and bake at 325 for 45 minutes.



Goulash in my favorite leftover too.

Ok, my mouse went crazy... I wanted to say I love cooking, but I get tired of making food at times. I definitely want to take a cooking class to introduce me to new things and new combinations.

I hate cooking too...but here's an easy one and has lots of leftovers too...I call it "cheater potatoes augratin - with or without chicken" depending on my mood...

1 - 16 oz bag frozen hasbrowns (I prefer the shredded style, but the cubes work too)
1 - 8 oz. container of sour cream
1 - 8 oz. bag of shredded cheddar cheese (more/less if you'd like - save a little for the topping)
1 - 4 oz. bag of shredded parmesan (optional)
1 can condensed cream of potato soup (just the can, don't make the soup)

Mix all of the above together - spread in a casserole dish (glass works best), sprinkle more cheddar cheese on top, bake at 350 for about 45-60 mins (til cheese is bubbly and melted).

Sometimes, I throw a couple of boneless chicken breasts (thawed) right on top of the mixture, salt & pepper, cover with a piece of bacon....it cooks right along with the potatoes in the same amount of time.

Anyway. COVER the potates with foil til the last 10 mins or so or they will burn.

Love the recipes! Thanks. Here's one of my favorites....

Chicken Jambalaya

Double the recipe to make 4 servings

1 1/2 tbsp vegetable oil or butter
1lb chicken breast meat, cubed into 1 inch squares
1 red pepper, seeded and cored, diced ( I also use yellow or orange
peppers)
1/4 cup diced celery
1/2 cup brown rice
1/4 tsp red pepper flakes (also known as crushed red pepper)
1 1/2 cups boiling water
1/8 tsp dried thyme
1 tbsp dried parsley
1 bay leaf
1/2 cup slivered ham (I usually get 1/4 lb sliced deli ham and slice it into
thin strips)

Heat oil or butter in a skillet over medium heat, add chicken and cook,
turning frequently for 10 minutes, until browned. Remove to a plate and
season with salt and pepper if desired.

Add to the skillet drippings the pepper, celery, rice and red pepper flakes.
Stir over medium low heat until coated with the pan drippings.

Add boiling water, parsley, thyme and bay leaf. Return chicken to skillet,
cover and cook over medium-low heat for 35-40 minutes, until rice is done.
Remove cover and cook about 3 more minutes, until most of the moisture is
gone. Makes 2 generous servings. Enjoy!

OOOO I love jambalaya so thanks for that one!

I agree with the poster who likes one dish meals. My crock pot is my favorite appliance. Here are a couple of really easy recipes I make with it, you can prepare them the night before and cook em up the next day. They are also pretty much impossible to overdo so you can just let it go all day.

Easy Chilli

Soak 1 pound of dry beans in water (just enough to cover the beans) in the crock overnight.
Crumble 1 pound of lean ground beef into the crock (you can brown it first to speed things up if you want)
Dump enough salsa into the mix to make it a nice thick chilli consistancy. I usually use hot salsa cuz I like the heat but use whatever you like. Cook on low all day. Yum.

MMM Beef Stew

Dump equal parts stew meat cubes, baby carrots, potatos, and 1 onion in the crock. Add 1/2 a cup of worshteshire (sp??) sauce, 1/4 cup soy sauce, and enough water to fill the crock a little less than half way. Cook on high (the longer you cook this the more tender the meat will be). When you're ready to serve thicken the gravy right in the crock with a mixture of 3 table spoons cornstarch and 1/2 cup COLD water.

I'm a big fan of tv dinners. There's hardly any dishes to do afterwards and more than likely, they have lots of calories in them!
