Magic of Broth

The wife and I are both good cooks and we make our soup at least three times a month. I suppose being Scottish it is quite a tradition to have soups on the go, I learned from my mother, but mostly I make it up as I go.
Do you have a big 'Jennie' pot, we have two, one bigger than the other. The biggest must hold at least two gallons, trouble is that we often make so much soup that we end up feeding the kids on the street, they dont mind though. My fave soup is beef mince, potato and tomato.

I thought my stock pot (I like the term jennie better) was big but for the beef broth I needed to get an even larger one. My mouth is watering with all this soup talk. My nanny (grandma) was Irish so soups and stews were great...Irish soda bread dark and light - yummy. My hungarian grandma made some great soups...she used alot of organ meats which I have never eaten and don't know if I could get into. My dad swears they were great tasting soups. I should share her chicken paperkash recipe --- it is to die for, loaded with calories and fat but truly worth it ;-)

Do you ever freeze your soups? Most will thaw really nice and it saves tons of time. Great for lunches with crusty bread, olice oil and cheese and fruit. Okay now I have to go get something to eat.
