I still disagree with what the Anonymous has stated.
Obviously, no one should take anything in excess, but having vinegar with a good balance of vegetables and fruits will cause more good than harm. Too much Kimuchi will most definitely tear up anybody's gastrointestines (or at least burn the hair off their B*tt!), but having it with other foods is not going to be detrimental to your health.
BTW, Wasabi is a good agent in killing bacteria in the mouth and stomach...it was used to kill any possible bacteria on raw fish...and I LOVE Wasabi!! (So does my Brother-in-Law!)
I say, Eat that Hot Dog with Mustard, just avoid the MSG!!

As for Kimuchi...I'm looking forward for my next Kimuchi Ramen meal!!

Vinegar is acidic. Thus, it can make the digestive tract unpleasant for germs and fungus. An article dealing with birds talks about this (<a target=_blank class=ftalternatingbarlinklarge href="http://www.cagenbird.com/vinegar.htm">http://www.cagenbird.com/vinegar.htm</a>)

Vinegar is in itself "antifungal".

Now, in counterbalance to the accidity, some fungus including Candida thrive on ALL sugar and carbohydrates including fermented foods. avoid carbohydrates, sugars, alcoholic beverages, fermented foods, mushrooms, cheese, bread, wine, beer, and even fruit and fruit juices since they contain concentrated fructose, a natural fruit sugar. Dairy products should be used in small amounts because they contain lactose, a milk sugar and foods including vinegar, coffee, tea, fried foods and spicy dishes.

Honestly, the research seems oddly divided between people saying vinegar's acidity is anti-fungal and ones saying it helps.

I'd sya this is a case for moderation.
