Kale, it's loaded with vitamins. Just over 3 ounces of kale has roughly 800mcg vitamin K, 400+ of potassium, and over 15,000IU vitamin A (lots of lutein and zeaxanthin as well). Others like mustard or collard greens have a similiar profile. Dried cilantro has about 1200mg of potassium and packed with several other minerals in hefty amounts. parsely isn't far behind that. You can't go wrong leafy green veggies.
Yellow bell peppers are packed with more vitamin C than most other fruits or veggies. If I can think of more I'll post it later.
